FRUIT TART RECIPE x 3 - My Berry Forest (1)Summer desserts can be very quick to make and they don’t have to be super sweet. Fruit tart recipe x 3 all three recipes are delicious, easy, healthy, no-bake, vegan, gluten-free and take less than 20 minutes to make. These tarts are naturally sweetened with just fruits!

Strawberry tart

I made this tart using both strawberries and pineberries from our garden! Pineberries look kind of like unripe strawberries, but they really are supposed to look like this. The flavor is like strawberries and pineapple combined. You can use any fruits here, but I recommend strawberries, because they go so well together with cocoa whipped cream.

Unlike the other two tarts, this one also has a little bit of sweetness from dark chocolate.

Crust

  • 1 cup (90 grams) rolled oats
  • 1/3 cups (50 grams) sunflower seeds
  • half of a medium sized banana (about 50 grams). Choose a ripe, sweet one.
  • 1 oz / a few small pieces of dark chocolate (I’m using 80% so not super sweet)
  • 3 tbsp tahini or sun butter
  • 1,5 tbsp coconut oil
  • 1/4 tsp salt or to taste

Filling

  • 2 cups vegan whipped cream mixed with 2 tbsp cocoa powder
  • 1,5 cups strawberries (and pineberries if you can find them!)

Blend all crust ingredients until everything sticks together. If the crust is too sticky, add more seeds or oats. Press crust on to the bottom and edges of a springform pan or any other pan you like lined with parchment paper for easier removal. I used a 22 cm / ~9 inch pan. Put the crust in the freezer for about 10 minutes. Slice strawberries. Spread whipped cream on top and decorate with berries.

Fruit tart recipe 2: Strawberry nectarine tart

Crust

  • 1/2 cups (60 grams) nuts and/or seeds. I used both walnuts and cashews.
  • 1/2 cups (50 grams) rolled oats
  • half of a medium sized banana (about 50 grams). Choose a ripe, sweet one.
  • 1,5 tbsp coconut oil
  • 1,5 tbsp nut butter such as almond butter or cashew butter
  • 1/4 tsp salt (or to taste). Salt is an essential ingredient as it gives the crust flavor and enhances the sweetness.
  • optional but recommended: 1/2 tsp Ceylon cinnamon for flavor

Toppings

  • 1,5 cups vegan whipped cream
  • 1 cup strawberries and 2 nectarines or other fruits of the season.

Blend all crust ingredients until everything sticks together. If the crust is too sticky, add more nuts, seeds or oats. Press crust on to the bottom of a springform pan or any other pan you like lined with parchment paper for easier removal. I used a 22 cm / ~9 inch pan. Put the crust in the freezer for about 10 minutes. Slice nectarines and strawberries. Spread whipped cream on top and decorate with fruit.

Fruit tart recipe 3: Berry tart with salted caramel

Crust

  • 1/2 cup nuts such as cashews and pecans
  • heaped 1/2 cup gluten-free rolled oats
  • half of a medium sized banana (about 50 grams). Choose a ripe, sweet one.
  • 1,5 tbsp coconut oil
  • 1 tbsp cashew butter
  • 1/4 tsp salt (or to taste)
  • 1/4 tsp vanilla bean powder

Salted caramel sauce

  • 1/3 cup cashew butter
  • half of a medium sized banana (about 50 grams). Choose a ripe and sweet one.
  • 4 tbsp plant-based milk (or less/more depending on how liquid you want the sauce)
  • few pinches of salt to taste

Toppings

  • 1,5 cup vegan whipped cream
  • 1 cup berries such as currants

Blend all crust ingredients until you have a smooth easy-to-shape crust. Add more salt if needed to get the right salty-sweet balance for your liking. This depends on the sweetness of the banana used. Press crust on the bottom of a pan. You can line the pan with parchment paper so that it’s easier to remove. Store in the freezer for about 10 minutes. Blend salted caramel ingredients and add salt little by little until you have the right balance. Spread vegan whipped cream on top of crust. Drizzle salted caramel sauce on top and decorate with berries.

NOTE: if you want your tart to be sweeter, just add a couple of dates instead of banana. Or use both dates and banana! You might need to adjust the other ingredients (oat / nuts / seeds / oil / nut butter)
