My favorite meatloaf recipe for busy weeknights, this take on the original Lipton Onion Soup Meatloaf recipe is fast, flavorful, and full of wonderful onion flavor the whole family will enjoy.
The secret ingredient? A packet of Lipton Onion Soup Mix! This quick, easy and delicious meatloafpreps in about 10 minutes, and bakes in under 45 minutes, all in a loaf pan. This moist Souperior meatloaf is tender, flavor packed, and coated in a simple and delicious glaze you can make with items from your pantry and fridge.
Serve individual slices of this French onion meatloafwith some fluffy mashed potatoes and your favorite veggies for a hearty homemade dinner that's sure to become a new family favorite!
Ingredients
This flavorful meatloaf comes together easily in a loaf pan or meatloaf pan,with simple ingredients. Here's what you'll need to make it:
- ½ sleeve saltine crackers, pulsed to crumbs in food processor (or ½ cup plain breadcrumbs). Skip panko (too airy/crunchy) and seasoned bread crumbs. There's plenty of flavor in the seasonings, so opt for plain bread crumbs or crackers for this recipe.
- A bit of milk (use what you drink).
- One egg, to help bind everything together.
- One envelope of Lipton onion soup mix. You can use any store brand dry onion soup mix as well!
- A couple scallions, thinly sliced. These add a bit of fresh flavor to the meatloaf, and cook easily into the mixture in the oven, since they are thinly sliced.
- A pound of ground beef. I like to use an 80/20 blend for a super moist meatloaf, but you can use leaner blends as well.
- Worcestershire sauce, for an umami boost of flavor that enhances the French onion soup flavor of the Lipton packet. I prefer Lea and Perrins brand Worcestershire sauce.
- A bit of ketchup, for that classic meatloaf flavor. You'll use this in the glaze as well.
- Freshly ground black pepper. I do not add salt to this recipe, as the Lipton packet and Worcestershire sauce provide plenty of salt to the recipe.
Meatloaf glaze
This classic recipe comes complete with a simple, 3 ingredient glaze. Here's what you'll need:
- Ketchup, as the base of the glaze.
- Dark brown sugar, for a touch of sweetness and caramelization.
- Dijon mustard.
How to make this easy meatloaf recipe
- 1. Preheat oven to 350 degrees f.
- Pulse crackers in a food processor until fine crumbs form. Alternatively, you can crush them in a zip top bag with a rolling pin, or substitute ½ cup plain breadcrumbs.
- Whisk egg in a large mixing bowl, and add cracker crumbs, onion soup packet, and milk. Let stand for 5 minutes.
- Add sliced scallions, Worcestershire sauce, ketchup, and pepper to the bowl. Add beef, breaking up into smaller pieces to make it easier to incorporate into the mixture.
- Combine with your hands until meatloaf just comes together, being careful not to overwork the meat.
- Transfer meat mixture to a greased 8 ½” x 4 ½” loaf pan. (Grease pan with cooking spray, oil or butter).
- Whisk together glaze ingredients, and coat the meatloaf, using a spoon or silicone brush.
- Bake the meatloaf in greased loaf pan for 30-45 minutes in preheated oven, or until internal temperature in center reaches 165 with a meat thermometer.(see recipe card below for full recipe).
Serving the Glazed Onion Soup Meatloaf
Once the meatloaf is baked, let the meatloaf restfor at least 15 minutes prior to slicing and serving. This meatloaf goes great with mashed potatoes, and any veggies you like. I love it with green beans or peas!
Additions and Substitutions
This meatloaf recipe can easily be adjusted to your tastes, and what you have on hand. Here are some great swaps and additions you can use to make this recipe your own:
- Instead of 80/20 ground beef, you can use ean ground beef, ground turkey, a combination of ground beef, ground pork and ground veal (meatloaf mix), or ground chicken.
- Want to make a bigger meatloaf to feed a bigger crowd? You can double the recipe with 2 pounds of ground beef, and bake for 1 hour to 1 hour and 15 minutes! If making a larger meatloaf, place a baking sheet under the loaf pan to catch any possible drippings due to it's larger size.
- No loaf pan? No problem! Simply form the meatloaf mixture into a loaf shapein a greased baking dish.
- Add ½ cup grated parmesan cheese to the mix!
- Instead of scallions, try finely diced shallots or onion. To use onion or shallot, substitute ¼ cup onion or shallot for 2 scallions.
- No brown sugar? Try honey in the glaze instead.
- If you don't have dijon mustard, you can use regular yellow mustard for the glaze.
Storing Leftovers
Store any leftovers in an airtight container in the refrigerator for up to 4 days.
